- Gather your ingredients to make the oatmeal. (Not shown here: Water, flavored coffee creamer, and almond milk). Prep the cherries by cutting them in half with a pairing knife. Then, gently remove the seed by moving the tip of the knife around the edge of the seed until it pops out. Place the cherries in a small bowl and discard of the seeds.
- Sprinkle the sugar on the cherries and stir them to evenly coat. Microwave the cherries for 30 seconds. Next, add the vanilla extract and stir again. Set them aside as you prep the oatmeal.
- In a separate small bowl, add the oats, spices, and salt. Next, pour in the water and coffee creamer. Stir and microwave for 2 minutes 30 seconds or as instructed on the product's packaging.
- Gently mix in half of the chopped chocolate (about 1.5 tbsp) into the warm oats. Use mostly the larger pieces to create puddles of chocolate. Be careful not to overmix the oatmeal in order to prevent the oats from looking muddy. Then, use your spoon to pull around the edges of the bowl as you pour in the almond milk (to prevent the chocolate from hardening).
- Lastly, top oatmeal with the cherries (and their juice) and sprinkle the remaining chocolate over the top. Add the almonds for added texture. Enjoy!
