Spiced Apricot & Golden Raisin Oatmeal

Oatmeal Ingredients
 ½ cup old-fashioned oats
 pinch of sea salt
 ¾ cup water
 ¼ tsp ground cinnamon
 ⅛ tsp grated or ground nutmeg
 2 tbsp sweet cream flavored coffee creamer (International Delight Cold Stone Creamery Sweet Cream flavor was used; Vegan option: Non-dairy flavored creamer)
 ¼ cup almond milk, unsweetened vanilla (Califa Farms brand was used)
Apricot & Golden Raisin Topping
 ¼ cup dried apricots (treated with sulfur dioxide)
 2 tbsp golden raisins
 ½ cup hot water (not boiling)
 2 cinnamon stick shards
 1 star anise pod
 1 peach ginger black tea bag (Revolution Tea brand was used)
 splash of vanilla extract
 2 tsp maple syrup
 2 tsp honey
Garnish (Optional)
 sliced roasted almonds
 dash of cinnamon and nutmeg
Oatmeal & Topping Preparation

- Gather your ingredients to make the oatmeal recipe. In a serving bowl, add the oats, salt, cinnamon, and nutmeg.

- In a separate small glass bowl, pour the hot water over the dried fruits. Add the cinnamon stick, star anise, and tea bag to the bowl. Pat everything down with a spoon to ensure each item is covered in the water. Cover with a lid or plastic wrap and steep for 10 minutes.

- While the fruit is steeping, add the water and creamer to the oatmeal. Microwave the oatmeal for 2 minutes and 30 seconds, or until the oats have absorbed all of the liquid and are tender. Next, add the almond milk to the cooked oatmeal and stir to combine. Set it aside as you continue to prep the fruit.

- Once the fruit has steeped, remove the fruit into a separate small bowl.

- Add to the steeping liquid the vanilla extract, maple, and honey and stir to combine. Microwave the liquid for 4-5 minutes or until the liquid has reduced by almost 1/2. It should become the consistency of light syrup and will be darker in color. Next, remove the whole spices.

- Place the reconstituted fruit on top of the prepared oatmeal. Then, pour the syrup over everything. Sprinkle on some toasted almonds and add a dash of ground cinnamon and nutmeg. Serve and enjoy!
