A juicy, sweet peach & blueberry oatmeal recipe

To lighten such a hearty dish as oatmeal, I typically add some colorful fruit. In this case, plump blueberries and ripe peaches give a burst of juicy sweetness. Crushed walnuts provide healthy fats and give a wonderful crunch and texture. And with the natural medicinal benefits of cinnamon and nutmeg, I really cannot think of a more well-rounded breakfast dish.

A bowl of oats that sets the mood for the day

I eat oatmeal almost every day to sustain me for hours with a busy baby. If made well, with a little extra care, oatmeal can feel like a warm, fuzzy blanket on the inside. There is just something about experiencing a bright sunrise in the early morning while enjoying a colorful bowl of yummy, healthy goodness. This simple and satisfying peach and blueberry oatmeal recipe is a great way to ignite all of the senses and begin the day in an optimistic and positive mood.

Spice up that oatmeal first!

Oatmeal, standing alone, is quite boring and tasteless. However, since it is the base ingredient in this breakfast meal, it should be seasoned well. Most oatmeal brands instruct the reader to add a pinch of salt as a basic ingredient when making oatmeal. Please do not skip this step, because it really makes a difference between your oats falling flat versus tasting balanced. Additionally, I add cinnamon and nutmeg which pair very well with grains, nuts, and fruits.

Peach Blueberry Oatmeal

Oatmeal
 ½ cup old-fashioned oats
 pinch of salt
 ½ tsp ground cinnamon
 ⅛ tsp ground nutmeg
 ¾ cup water
 2 tbsp sweet cream flavored coffee creamer (vegan option: substitute w/ non-dairy flavored creamer)
Toppings
 ¼ cup almond milk, unsweetened vanilla
 ¼ cup fresh blueberries
 ¼ cup fresh peach, medium dice
 1 tbsp walnuts, chopped
 dash of cinnamon and nutmeg

Preparation & Cooking

- In a small bowl, add oats, salt, cinnamon, nutmeg, water, and creamer. Stir and microwave for 2 minutes 30 seconds.

- Remove from microwave and pour in almond milk. Stir.

- Top with fresh blueberries, peaches, and a dash of the spices for garnish. Add additional creamer if more sweetness is desired.

Notes

- The flavored creamer used in this recipe is Sweet Cream International Delight Creamer. However, as a vegan option, this can be replaced with a non-dairy flavored creamer.
