A bright and zingy blueberry oatmeal recipe

Waking up in the morning can be a real challenge. Sometimes, I just need a light and zippy flavor to give me a pick me up yet still provide that warm and cozy feeling on the inside. This oatmeal recipe meets both of those needs. The combination of sweet blueberries, tart lemon curd, and a light and creamy base will get your day started right!

Use fresh or frozen blueberries

As the seasons change from summer to fall, it can be more challenging to find fresh blueberries at their best–deep blue, firm, plump, and sweet. When faced with this dilemma, I defer to frozen wild blueberries (preferably Wyman’s Wild Blueberries).

First of all, they’re adorable! They are smaller than typical blueberries and have a much more intense blueberry flavor and color. Their juice provides a beautiful purple hue to anything they touch. So I suggest that you be careful not to splash it on your clothes unless you want to wear purple tye-dye fashions to work.

Also, wild blueberries apparently have higher antioxidant content than most store-bought blueberries that are possibly genetically modified and chemically altered. And, ladies, we know the power of antioxidants for the skin. Feel inspired to add this blueberry oatmeal recipe to your beautifying regime.

Lemon curd can be used for many dishes

On the other hand, lemon curd can be found at most grocery stores alongside other jams and spreads. Not only is it tasty in this oatmeal recipe, but it is also a shining star on ice cream, in tarts, cookies, cakes, pies, pastries, and other confectionery treats. Seriously, if you haven’t tried lemon curd on ice cream, you’re missing out on an incredibly gratifying simple pleasure (it’s so good)!

Blueberry Lemon Curd Oatmeal

Oatmeal
 ½ cup old-fashioned oats
 pinch of salt
 ¼ tsp ground cinnamon
 ¾ cup water
 1 tbsp sweet cream flavored coffee creamer (International Delight brand was used)
 1 tbsp lemon curd
Toppings
 ¼ cup almond milk, unsweetened vanilla (Califa Farms brand was used)
 ¼ cup frozen wild blueberries, defrosted (Wyman's Fresh Frozen Wild Blueberries brand was used)
 1 tbsp sliced almonds
 dollop of lemon curd

Preparation & Cooking

- In a small bowl, add oats, salt, cinnamon, water, creamer, and lemon curd. Stir and microwave for 2 minutes 30 seconds.

- Remove the oatmeal from the microwave. Pour in the almond milk and stir to combine.

- Top with blueberries, almonds, and a dollop of lemon curd.
