Tuna & Avocado Salad with Sesame Maple Dressing

But the salad dressing recipe, though!

When I made this salad, I was looking for something robust. I wanted more than just a simple homemade dressing of oil, vinegar, dijon, and honey. So, I accompanied the usual quartet with two new group members that really brought the house down–maple syrup and sesame oil. Oh, my goodness! By just adding these two simple ingredients my salad was singing a brand new song that I replay over and over again.

A multipurpose salad dressing recipe great for other dishes

This salad dressing recipe may also be used as a sauce or marinade for chicken, fish, vegetables, or other salad combinations. Just think, if you throw one of these marinade-laced items on the grill and allow the fire to carmelize its edges, becoming a bit blackened and crisp, while keeping the insides tender and juicy (drool), you too will have a showstopper of a meal. I recommend that you double this recipe if you fall in love with it the first time. It has become a staple in my fridge.

Don’t sleep on canned tuna

I typically plop a piece of protein on top of my salad to make it a balanced meal. My go-to protein is usually the incredibly delicious Starkist Yellowfin Tuna with Roasted Garlic and Extra Virgin Olive Oil or their Solid White Albacore Tuna in Water. In this case, I chose the latter to allow my homemade salad dressing to shine through. Just make sure to thoroughly drain the tuna before putting it on your salad. You don’t want it to swim away from your lettuce leaves 🙂

Tuna Avocado Salad with Sesame Honey Maple Dressing

Dressing
 1 ½ tbsp extra virgin olive oil
 1 tsp dijon grain mustard
 1 tbsp red wine vinegar
 ½ tsp honey
 ½ tsp maple
 ¼ tsp sesame oil
 ¼ tsp sesame seeds, toasted
 pinch of salt and pepper
Salad
 4 cups red leaf lettuce
 1 cup radicchio lettuce
 2 scallions, chopped (green parts only)
 2 3 oz can solid white albacore tuna in water, drained (StarKist brand was used)
 1 avocado, sliced

Preparation

- In a small jar, add all of the "Dressing" ingredients listed. Cover tightly with a lid and shake vigorously until emulsified.

Putting It Together

- In a large bowl, drizzle two tablespoons of the dressing around the sides of the bowl. Then, tear the lettuce into bite-size pieces and put it in the bowl. Toss together, allowing the dressing to lightly coat the leaves. Proceed to top the lettuce with the tuna and slices of avocado and pour additional dressing over them to soak into the tuna. Top the salad will additional sesame seeds for garnish.
