Peach Cobbler Oatmeal with Cream

Peach Cobbler Oatmeal

Oatmeal
 ½ cup old-fashioned oats
 pinch of sea salt
 ¼ tsp ground cinnamon
 ⅛ tsp grated or ground nutmeg
 ¾ cup water
 2 tbsp sweet cream flavored coffee creamer (International Delight Cold Stone Creamery Sweet Cream flavor was used)
 ¼ cup almond milk, unsweetened vanilla (Califa Farms brand was used)
Peach Topping
 1 fresh peach, cored, peeled, sliced into 8-10 wedges
 1 tsp butter or margarine
 1 tbsp peach or apricot preserves
 1 tbsp maple syrup (can be substitued with 1 tbsp plus 1/4 tsp of brown sugar)
 1 tsp ginger paste (Gourmet Garden brand was used; can be substituted with 1/4 tsp ground ginger))
 ½ tsp cinnamon
 dash of grated or ground nutmeg
 ¼ tsp vanilla extract
 ¼ cup water
Garnish
 drizzle of half and half
 drizzle of maple
 toasted almond slices
 dash of cinnamon and nutmeg
Oatmeal Preparation

- Gather your ingredients to make the peach cobbler oatmeal.

- In a small bowl, add the oats, spices, salt, water, and creamer. Stir and microwave for 2 minutes 30 seconds. Remove the oatmeal from the microwave. Pour in the almond milk and stir to combine. Set aside.

- Add peach wedges and the peach topping ingredients (i.e., butter, preserves, etc.) to a small saucepan on medium heat. Stir to combine. Allow the peach wedges to simmer for 4-5 minutes or until the fruit has softened but not mushy.

- Spoon the peaches and syrup mixture on top of the oatmeal. Garnish your peach cobbler oatmeal with additional ingredients as desired.
