Tuna & Avocado Salad with Sesame Maple Dressing

Tuna Avocado Salad with Sesame Honey Maple Dressing
Yields2 Servings

Dressing
 1 ½ tbsp extra virgin olive oil
 1 tsp dijon grain mustard
 1 tbsp red wine vinegar
 ½ tsp honey
 ½ tsp maple
 ¼ tsp sesame oil
 ¼ tsp sesame seeds, toasted
 pinch of salt and pepper
Salad
 4 cups red leaf lettuce
 1 cup radicchio lettuce
 2 scallions, chopped (green parts only)
 2 3 oz can solid white albacore tuna in water, drained (StarKist brand was used)
 1 avocado, sliced
Preparation

- In a small jar, add all of the "Dressing" ingredients listed. Cover tightly with a lid and shake vigorously until emulsified.

Putting It Together

- In a large bowl, drizzle two tablespoons of the dressing around the sides of the bowl. Then, tear the lettuce into bite-size pieces and put it in the bowl. Toss together, allowing the dressing to lightly coat the leaves. Proceed to top the lettuce with the tuna and slices of avocado and pour additional dressing over them to soak into the tuna. Top the salad will additional sesame seeds for garnish.
