Peach cobbler for breakfast

If you don’t like peach cobbler, I won’t judge you but I will definitely pray for you. It is a sweet, humble and hearty treat that the South presents best to the rest of the world. We should all be grateful (praying hands emoji). When I have a craving for peach cobbler in the morning (because that happens sometimes), I resort to a healthier and more appropriate version. Hence, my Peach Cobbler Oatmeal recipe. Sweet, cinnamony, buttery, and of course, peachy, I am able to satisfy my craving without the guilt.

Use fresh or canned peaches

Many peach cobbler recipes use canned peaches. However, I wanted to use fresh peaches for this peach cobbler oatmeal recipe. If fresh peaches are not currently in season or easily accessible to you, by all means, use canned peaches. If you use fresh ones, check how sweet they are before adding the suggested amount of maple syrup (or brown sugar, if preferred). Do not skip this step if you are not a huge fan of overly sweet breakfast foods.

Healthier cobbler substitutes

As you may have already figured out, the “cobbler” in this recipe is the oatmeal. It absorbs the fruity syrupy goodness from the stewed peaches giving this bowl of oats a nostalgic and comforting appeal. As a Southern girl who has enjoyed many a peach cobbler in my day, I’ve always had it with a pie crust. The “crust” in this recipe is replaced with sliced almonds. Additionally, a drizzle of half and half (or heavy cream if you dare) mimics a dollop of ice cream normally accompanying any good cobbler.

Enjoy these Royal Oats when you have a little extra time to pamper your tastebuds and take a mental trip to the South. Good eats, y’all!

Peach Cobbler Oatmeal

Oatmeal
 ½ cup old-fashioned oats
 pinch of sea salt
 ¼ tsp ground cinnamon
 ⅛ tsp grated or ground nutmeg
 ¾ cup water
 2 tbsp sweet cream flavored coffee creamer (International Delight Cold Stone Creamery Sweet Cream flavor was used)
 ¼ cup almond milk, unsweetened vanilla (Califa Farms brand was used)
Peach Topping
 1 fresh peach, cored, peeled, sliced into 8-10 wedges
 1 tsp butter or margarine
 1 tbsp peach or apricot preserves
 1 tbsp maple syrup (can be substitued with 1 tbsp plus 1/4 tsp of brown sugar)
 1 tsp ginger paste (Gourmet Garden brand was used; can be substituted with 1/4 tsp ground ginger))
 ½ tsp cinnamon
 dash of grated or ground nutmeg
 ¼ tsp vanilla extract
 ¼ cup water
Garnish
 drizzle of half and half
 drizzle of maple
 toasted almond slices
 dash of cinnamon and nutmeg

Oatmeal Preparation

- Gather your ingredients to make the peach cobbler oatmeal.

- In a small bowl, add the oats, spices, salt, water, and creamer. Stir and microwave for 2 minutes 30 seconds. Remove the oatmeal from the microwave. Pour in the almond milk and stir to combine. Set aside.

- Add peach wedges and the peach topping ingredients (i.e., butter, preserves, etc.) to a small saucepan on medium heat. Stir to combine. Allow the peach wedges to simmer for 4-5 minutes or until the fruit has softened but not mushy.

- Spoon the peaches and syrup mixture on top of the oatmeal. Garnish your peach cobbler oatmeal with additional ingredients as desired.
