Like most of us, I cheat on the holidays when it comes to eating. I don’t skimp on enjoying at least a little bit of everything, from succulent roasted turkey and mashed potatoes to my West-Indian favorites, oxtail and mac ‘n’ cheese. Honestly, anything with a rich gravy or a buttery, flakey crust must be devoured!
Nonetheless, I also appreciate having healthy options that give me, my family, and my guests an opportunity to balance out the traditional fatty, salty, carby feasting with a little more fiber, lean protein, and other nutrients. Especially, at times like this, where medical resources are limited due to the pandemic, I believe that we must prioritize our health, even on the holidays.
